Matar Potli (Peas Potato Money Bag)

பட்டாணி சுருக்குப்பை This dish is not a chettinad dish. I prepared this for a potluck and people just loved it. So, i thought, why not share this recipe with everybody. Ingredients 1: Carom Seeds(ஓமம்) - 1tsp Salt - 1 tsp Water - 100 ml Maida (All purpose flour) - 250 gms Oil - 2 tbsp Ingredients 2 : Boiled and mashed peas - 1 cup Boiled and mashed potatoes - 1 cup Cumin Seeds - 1 tsp Ginger Garlic Paste - 1 tsp Green Chillie paste/ crushed - 1 tsp Garam Masala - 1 tsp Coriander Leaves (chopped) - 2 tbsp Salt - as required Oil for frying Process: 1. Add all the items in ingredient 1 and knead a dough( like chapathi dough) 2. Heat oil in a pan, and put jeera. After it splatters, add g.chilli paste and ginger-garlic paste. Saute well. 3.Now, add mashed vegetables,garam masala and switch off the stove.The mixture should not contain any water. 4. Now chopped coriander leaves and mix it well. The filling is ready.   5. Thakkaali Kuzhambu(Tomato gravy)

தக்காளிக் குழம்பு This is a side dish for idli, dosai. The main ingredient is ripe tomatoes. Ingredients 1 : Tomatoes- 2 large Onion -1 large Garlic - 3 flakes Cinnamon - 1/2 inch piece Cloves - 2 nos. Fennel seeds- 1/2 tsp Ingredients 2 : Coconut - 1/2 inch piece Fennel Seeds - 1/2 tsp Poppy seeds - 1/4 tsp Red Chillies - 5 nos. Procedure: 1. Wet grind the items in ingredient 2 into a fine paste and keep aside. 2. Heat 2 tbsp oil in a pan and add the spices and saute. 3. Now, add chopped onion and garlic, saute well. 4. Then add tomatoes and saute until they are semi- pure ed. 5. Now, add the paste into the pan and allow to boil. 6. Add chopped coriander leaves and serve. Paruppu Urundai Kuzhambu(Multi-Gram Balls in a gravy)

பருப்பு உருண்டை குழம்பு This is a side dish . It is prepared in differnt ways. The procedure that i am going to give you is a healthy way of preparing this dish.     Ingredients 1: Red Gram (Thuvaram Paruppu) - 1/2 cup Bengal Gram(Kadalai Paruppu) - 1/2 cup   Fennel Seeds - 1/2 tsp   Cumin Seeds - 1/2 tsp   Ingredients 2 : Mustard seeds - 1/2 tsp Fenugreek seeds - 1/2 tsp   Asafoetid a - 1/2 tsp Curry Leaves - 2 sticks         Ingredients 3:   Coconut - 2 inch piece   Tamarind - 1 lemon size   Dhania Powder - 2 tsp   Chilli Powder - 3 tsp   Turmeric powder - 1/2 tsp   Salt - as per taste   Onion - 1 large chopped   Tomato - 2 medium chopped   Garlic Flakes - 15 chopped   Procedure: 1. Thiruvaiyaaru Asoka (திருவையாறு அசோகா)

Thiruvaiyaaru Asoka is a sweet dish. The main ingredient is Maida (All Purpose Flour ).Let us prepare and enjoy this yummy sweet. Ingredients: Maida (All Purpose Flour) - 1 cup Sugar - 2 cups Ghee - 1 cup Hot water - 1 1/2 cups Cashew Nuts, Raisins - few Cardamom Powder - 1 tsp Red Food colour - a dash Preparation Method: 1.  Heat ghee in a pan and fry the nuts and raisins. Keep aside. 2. In that ghee itself, add the maida and fry it.  3. Then, add the hot water and mix the maida well, without any lumps. 4. Now, add sugar and mix well.  5. At this stage, add the fried nuts, food colour and cardamom powder and mix well. 6. After ghee separates from the corners, it is ready to serve. Note : Reduce the quantity of sugar and ghee according to your taste and wish. This recipe is contributed by my grandmother Mrs.Lakshmi Muthieah.

VATHAKKUZHAMBU

This is another Chettinad dish. This goes well as a side dish for idli, dosai, cooked plain rice, etc.  The main ingredients used for this dish are dried berries called sunda vatral and manaththakkaali vatral.    Ingredients 1 :   Sunda vatral (dried turkey berry) - 2 tbsp  Manaththakkaali vatral (dried black night shade berry) - 2 tbsp  Tamarind - 1 lemon size  Onion - 1 medium  Tomato - 1 medium  Garlic - 5 to 6 flakes  Curry leaves - 2 sticks  Dhania powder - 3 tbsp  Chilli powder - 1 1/2 tbsp  Turmeric powder - 1/2 tsp  Salt - as per taste  Oil - 2 tbsp (preferably use sesame oil) Ingredient 2 :   Mustard seeds- 1/2 tsp  Urad dal - 1/2 tsp  Fennel seeds - 1/2 tsp  Fenugreek seeds - 1/2 tsp  Bengal Gram - 1/2 tsp  Asafoetida - 1/2 tsp  Procedure:   1. Heat little oil in a pan and fry both vatrals and keep aside.  2. Now, in another pan, heat oil and put all the ingredient 2 items and allow them to splatter.   3. AADI KOOLLU

Aadi Koolu is a very healthy food. The main ingredient is Black Gram Flour(Urad Dal Flour). It is a healthy snack for kids, as well as adults. Preparation time: 10 minutes Ingredients: Urad Dal Flour - 1 cup Jaggery - 1 cup. (Achu vellam 7 pieces) or 2 cups of brown sugar Butter - 1 stick Water - 2 cups Procedure: 1. Sauté the urad flour in dry heat. 2. Melt the butter in a pan. then, saute the flour in the butter. 3. Add the jaggery and the water in another pot and boil. Now, melt the jaggery , let it set. 4. Here, an important step is to strain the jaggery syrup. You will find dirt , when you strain it. 5. Remember, the jaggery is only melted , to remove the dirt. So, there is no need to check 1 or 2 string consistency of the syrup. 6. Now, add the strained syrup slowly to the flour, while constantly stirring the mixture. This is to avoid lumps . 7. CHETTINAATTU MEEN KUZHAMBU

This is a very simple, easy and tasty meen kozhambu.      I am using Tilapia Fish(நெய் மீன்) for this recipe.You can also use Red Snapper fish(சங்கரா மீன்), Anchovies(நெத்திலி மீன்), as per your taste and wish.  Ingredients:   Tilapia Fish - 2 nos. Onion - 1medium   Tomato - 1 medium Garlic - 5 cloves   Tamarind - 1 lemon size Curry leaves - 2 sticks   Mustard seeds - 1 tsp   Fenugreek seeds - 1 tsp Fennel seeds - 1 tsp   Dhania Powder - 3 tbsp   Chilli Powder - 1 1/2 tbsp   Turmeric Powder - 1 tbsp Salt
