Chutneys

In this post, we can learn about preparing various types of chutneys. I have already posted them in my Vidhya's All in All  kitchen website.So , just follow the link by clicking on the name of the chutneys. The chutneys : 1. Onion Chutney  2. Tomato Chutney 3. They won't even know , if there is a vegetable in the chutney. It will be yummy with idlis, dosas, chapathis and also as bread spreads and chapathi rolls. Enjoy !

Easy Chicken Sukka

This is a very simple to make and yummy dish, which kids will love. You will need : Chicken - 1 cup (cut into small pieces) Ginger , crushed - 1 tbsp Garlic , crushed - 1 tbsp Salt- as per taste Dhania Powder - 1 tbsp Chilli Powder - 1 tsp Turmeric Powder - 1/4 tsp 1. In a pan, heat 1 tbsp oil, and put, ginger, garlic, chicken and saute together. 2. Add salt, turmeric powder, chilli powder and dhania powder and saute well. 3. Keep the flame in simmer and 1/2 cup of water. 4. Let the chicken get cooked well. 5. Now, add a little garam masala and keep sauting, till all the water is gone. Chicken sukka is ready... yum yummm....

Parangikkai Koottal Kuzhambu (Red Pumpkin Kuzhambu)

This is a very easy and and quick to cook dish. Ingredients : Red Pumpkin - 1 lb Onion - 1 large , chopped Garlic - 10 pieces Tomato - 1 medium chopped Tamarind - 1 lemon size, make a puree out of this Dhania Powder - 2 tbsp Chilli powder - 1 1/2 tsp Turmeric Powder - 1/2 tsp Water - 1 1/2 cups Salt - as per taste Cooking Oil for seasoning : Mustars seeds, Methi seeds, Fennel seeds, Channa dal - 1 tsp, Asafoetida, Curry leaves 1. Cut the red pumpkin into 1 inch cubes. 2. In a pressure pan, add the pumpkin, onion, garlic, tomato,dhania powder, chilli powder,salt,     turmeric powder , tamarind puree, water and 1 tbsp oil . 3. Now, switch on the stove and pressure cook this for 3 to 4 minutes . It has to only get cooked,      not mashed. So, be careful. 4. Now , in a pan, heat 1 tbsp oil and put all the items for seasoning .  5. Transfer the contents from the cooker to the pan and allow it to only come to a boil      and switch it off. Remember, don't boil it for more than 2 min

Macroni Kuzhambu(Elbow Pasta in a tamrind gravy)

This is a chettinaad special kuzhambu and also my maternal grandmother's recipe which is my favourite. This is an easy to make recipe and also very yummy. It is a good combination with idli, dosa and cooked plain white rice.        Ingredients needed : Macroni (elbow shaped pasta)  - 1 cup   Onion - 1 large chopped  Tomato - 1 large chopped Garlic - 10  pieces Tamarind - 1 lemon size Dhania Powder - 3 tbsp Chilli Powder - 1 tbsp Turmeric Powder - 1 tsp Salt - as per taste  For Seasoning : Mustard, Methi Seeds, Fennel Seeds, Asafoetida, Chana Dal - 1/2 tsp and  Curry leaves.    How to prepare : 1. In a pot , put the pasta , water, little salt and 1 tsp olive oil  and cook , then drain the excess water. 2. In a wok, heat 2 tbsp cooking oil, and add all the items for seasoning. 3. Add the chopped onion and garlic and saute. 4. Now add the chopped tomato and saute. 5. Make a puree of the tamarind and keep it in a bowl. 6. Now, in the wok, add the dhania powder, chilli pow

Egg Masala Dosai

This Egg Masala Dosa is a Kids Special Dish. It is very easy to make and also very yummy. Not only kids, even adults will love it. It is very healthy too. In the world of fast food  and junk food,  this will be a healthy and easy to cook breakfast or dinner for the moms. Ingredients needed : Dosai batter : 1 cup Eggs, beaten : 2  Jeera (Cumin)Powder : 1/2 tsp Pepper Powder : 1tbsp Salt : 1tsp Coriander leaves and curry leaves finely chopped : 1 tsp (optional) Grated ginger or Ginger Paste : 2 tsp(optional) How to Prepare : 1. In the beaten eggs, add the salt , cumin powder and pepper powder.  2. In the dosa batter , add chopped coriander leaves, and grated ginger, if your kids like.  3. Now add the beaten eggs mixture into the batter and mix well. 4. Now in a hot tawa (skillet) , pour a laddle full of batter into dosas . 5. Decorate  the dosas with ketchup in the shape of smiling face or any design your kids like.
