Kesari (கேசரி)

This sweet dish is simple and easy to make with ingredients which are all time available. I had very less time early this morning to make some sweet on my wedding anniversary. So, I chose kesari , which took only 10 minutes to prepare. Let's see how to prepare kesari. Ingredients needed : Sooji (Rava)- 1 cup Sugar - 3/4 cup or 1 cup Water - 2 1/2 cups Ghee  - 2 tbsp Cashew nuts and raisins - 2 tbsp Cardamom Powder - 1/2 tsp Yellow food colour - 3 drops (you can also choose orange colour) In a thick bottomed pan , heat 1 tbsp ghee and first roast the nuts and raisins and  keep it separately. Simultaneoulsy ,boil the water in a pan . Now add the rava in the same kadai and keep roasting it in low flame, until you get a good smell . Then pour the boiling water into the roasted rava and keep stirring continuously so that lumps do not form. Once the rava is cooked, and becomes thick, add the sugar and keep stirring.
