Soft Mysore Pak

Hi all,

Today, I am going to share my recipe for a soft and silky smooth Mysore Pak.

Ingredients needed:

Gram Flour / Kadalai Maavu / Besan - 1/2 cup (sifted)

Sugar - 1 cup

Whole Milk - 1/2 cup

Oil - 1/2 cup ( I used Canola oil, but you can use any oil, which doesn't have a strong flavor or aroma by itself. For example, do not use Sesame Oil, Coconut oil, Mustards Oil, Groundnut Oil, etc)

Clarified Butter / Nei / Ghee - 1/4 cup ( it should not be melted, it should be at room temperature. If it is in a liquid state, keep in the refridgerator for 15 mintues  and whisk it a little before using in the recipe.)

Please follow the steps exactly to obtain best results. Use a thick bottomed and wide mouth pan.

In the pan, add the following ingredients one by one. Please note!! I have not asked you to switch on the stove yet! So now, add the flour and milk and mix well without lumps. I prefer to use a whisk for mixing. Then switch on the stove in a medium flame and keep the pan with the flour milk mixture.

Now, add the sugar, 1/2 of the oil and half of ghee and and keep stirring until the sugar dissolves. Make sure the stove is in medium flame. You can stir ocassionally until the sugar dissolves.

Then, when it is about 12 minutes from the start of switching on the stove, start adding the oil little by little and keep stirring continuously so that the mixture doesn't stick to the bottom of the pan.

You will start noticing that the mixture has thickened a little and now, you should not walk away from the stove even for a minute. Then, the mixture will be burnt at the bottom and that will spoil the taste of the Mysore Pak.

Add the ghee and oil little by oil until you finish them.  Now, when the mixture does not stick to the bottom of the pan, the Pak is done. Immediately switch off the stove and transfer it to a greased container.

Within 3 to 5 minutes of transferring to the container, cut into desired shapes. Serve when it has cooled down completely.

It took approximately 18 to 20 minutes from start to end. It makes 10 to 12 medium sized pieces for the mentioned quantity. When I doubled the measurements of this recipe, ie, 1 cup of flour, it took me 28 minutes from start to end. I calculate the time to get the correct consistency of the soft mysore pak.

Enjoy! Please do not forget to share and leave your Comment".

Significance of Pillayar Nonbu

Pillayar nombu is a nombu celebrated exclusively by Naattukkottai Nagarathars. This post is intended for young chettiar couples living far from their families, who want to know about this nonbu and celebrate it at home. The significance of performing this nombu, is that we pray to Lord Ganesha, requesting him to remove all the obstacles in our life.  I have heard that there are 3 versions of the story behind this nonbu. I am sharing the one that my mom has told me... A teenage girl was ill-treated by her step-mother. On karthigai deepam day, this step-mother's diamond ring was missing and she accused this girl of stealing her ring. This girl went to a pillayar temple and prayed to Lord Ganesha that she will prove herself as innocent and find the ring. So she started saying her prayers to Lord Ganesha, by removing one thread a day from her cotton saree for 21 days. She promised to the God that, when she proves her innocence, she will make the number of threads she has on that day as...
