Payasam /Chilled Summer Drink

The weather is getting better and who will say NO to a refreshing chilled payasam... Let's get started.. Ingredients (Serves 5) Milk - 2 1/2 cups Water - 1/2 cup Saffron - few strands (optional) Cardamom powder - 1/2 tsp Raw rice - 1 tsp Almonds - 10 nos Light brown sugar - 1/4 cup Ghee / clarified butter - 1 tbsp Nuts and raisins of your choice to garnish.  Soak the almonds, rice and the saffron strands in 1/2 cup of hot water for about 10 to 15 minutes. Remove the skin from the almonds. Using a blender, grind the soaked almonds, saffron strands and the rice into a fine paste by adding 2 tbsp of the water that we used for soaking. Then add the remaining water into the blender, mix well and keep aside.  In a saucepan, heat the milk. Once bubbles start forming around the edges of the pan, pour the almond and rice mixture. Refreshing Raspberry Mocktail

Greetings dear readers! Now that the summer is approaching, I thought of sharing a refreshing summer drink recipe that you can make at home. I have used 'Belveder' raspberry syrup for this recipe. It is easily available in-store and online. You can use any raspberry syrup available in the market.  Let's gather all the ingredients...  Raspberry syrup - 4 tbsp Water - 6 cups Juice of 1 lemon  Honey - 1 tbsp (diluted with 2 tbsp of warm water) Fresh mint leaves- few Lemon rinds  Ice cubes  In a pitcher, add the syrup, water, lemon juice and diluted honey and stir well. Now tear the mint leaves and add to the syrup. Finally add the lemon rinds.  Refrigerate for 2 hours and refreshing summer drink is ready! Serve with ice cubes and enjoy 🍷 🍷

Badam Kesar Payasam/ Almond Saffron Pudding

  Today, I am going to share the recipe for a yummy dessert, which is one of my favorites. It's richness and flavor will want you to have more and more!! The following measurements makes 16 cups of payasam/ pudding Almonds - 20 ; Soak these almonds in water overnight Sona Masoori rice - 1/4 cup; Soak in water overnight Water - 2 cups Milk - 8 cups ( I used whole milk, you can use any milk of your choice) Saffron / Kesar - Soak a few strands in 1 cup of warm milk and keep a few strands aside, to garnish  Sugar - 1 1/2 cups or as per your taste First remove the skin from the almonds and roughly chop into pieces. Then in a blender, add the chopped almonds, soaked rice and the saffron milk and grind to a fine paste. Now in a saucepan, add 2 cups of water and the almond-rice paste and mix well. Moringa Twig Clear Soup ( முருங்கைக்காம்பு சூப் )

Today we will learn how to prepare a healthy soup with drumstick twigs. When we separate the leaves from the stem, I save the stem parts / twigs. I enjoyed this health drink prepared by my grandma and wanted to share the recipe with you too.  In the picture below, you will see that I have separated the leaves and also separated the small twigs from the stem. You have to discard the stem and only use the twigs. You can store the leaves in a dry container for a few days.    Now let's see how to prepare the healthy soup... Paruppu Payasam(பாசி பருப்பு பாயசம் )

This is a sweet dish called Paruppu Payasam, ie., Yellow Moong dal Kheer , it is easy to prepare . This recipe is very easy to prepare and even bachelors can prepare for their bachelor's party ! The ingredients are :  1 cup - Yellow Moong Dal ,  1 cup - Milk 2 cups- Powdered Jaggery Cardamom seeds  - 2 tsp powder Cashew ,Almond and Raisins - few, roasted in ghee 1. First, wash and pressure cook the dal in 1 cup of water for 3 minutes. 2. Boil the milk separately in a pan.  3. Then add the jaggery powder and the cardamom powder  in the dal until it dissolves completely. 4. Do not mash the dal, otherwise it will become sticky. 5. Now add the boiled milk and stir well.  6. Finally, garnish with the roasted nuts and raisins. Enjoy the Payasam and let your lives be sweet as this dish !!
