கத்திரிக்காய் கோசம்மல்லி
This is a dish which even Bachelor's can prepare. It is called கத்திரிக்காய் கோசம்மல்லி. It is a chettinaad special side dish for idli and dosa.
Ingredients :
Onion - 1 medium
Tomato - 1 medium
Green chillies - 5
Eggplant - 4 large (large will have seeds)
Tamarind - small gooseberry size (amla size)
Curry leaves - few
Coriander leaves - few chopped
Method of Preparation :
1. Pressure cook the eggplants and keep aside. Let it cool.
2. Now, in a skillet, heat 1 tbsp oil , add mustard seeds. After it crackles, add
the chopped onion, curry leaves, and chopped g.chillies and saute.
3. Now, add the chopped tomatoes and saute.
4. Now, peel off the skin from the cooked eggplants and mash it.
5. Now,add tamarind paste and the mashed eggplant into the skillet .
6. Add required water and let it come to boil .
7. Switch off the stove. Garnish with coriander leaves.
Tips for bachelors :
1. You can avoid seasoning with mustard seeds(if you don't have).
After heating the oil, directly add onion, curry leaves, g.chillies, etc.
2. If you don't have tamarind handy , you can add 1 tbsp of lemon juice.
Pillayar Nombu is celebrated in honour of God Pillayar (Ganesha) by the Chettiars on the 21st day after the Thirukkaarthigai Deepam, when Sashti Thithi and Sadayam (also called Shatabhisha) Nakshathra come on the same day. In US, it comes on Dec 26th, 2014. To make the ellai maavu , you will need Raw Rice - 1 cup Jaggery grated - 1/2 cup To prepare the rice flour, first soak the rice in water for 2 to 3 hours. Then drain the water and spread it on a paper towel or white cloth and let it dry for 20 minutes. Now, the when the rice is still wet, grind it in a mixie , into a powder. Sieve it and collect the coarse powder and grind it again and seive it. Repeat this until very less coarse powder is left. In a pan, put the jaggery and add 2 tbsp of water and heat it until the jaggery dissolves completely. Now, sieve it in a tea strainer and collect the jaggery syrup. It should neither be too thick nor too thin.
you can also add 2 boiled potatoes (pressure cook them along with the eggplants)at step 5, this would give a great taste and a good thickness to the gravy. it also boosts the nutritive value!
