This is a chettinaad special kuzhambu and also my maternal grandmother's recipe which is my favourite.
This is an easy to make recipe and also very yummy. It is a good combination with idli, dosa and cooked plain white rice.
Ingredients needed :
Macroni (elbow shaped pasta) - 1 cup
Onion - 1 large chopped
Tomato - 1 large chopped
Garlic - 10 pieces
Tamarind - 1 lemon size
Dhania Powder - 3 tbsp
Chilli Powder - 1 tbsp
Turmeric Powder - 1 tsp
Salt - as per taste
For Seasoning :
Mustard, Methi Seeds, Fennel Seeds, Asafoetida, Chana Dal - 1/2 tsp and Curry leaves.
How to prepare :
1. In a pot , put the pasta , water, little salt and 1 tsp olive oil and cook , then drain the excess water.
2. In a wok, heat 2 tbsp cooking oil, and add all the items for seasoning.
3. Add the chopped onion and garlic and saute.
4. Now add the chopped tomato and saute.
5. Make a puree of the tamarind and keep it in a bowl.
6. Now, in the wok, add the dhania powder, chilli powder, turmeric powder and salt and saute.
7. Add the tamarind puree to it and 2 cups of water and allow it to boil.
8. When this is boiling, and the bubbles appear, add the cooked pasta and boil it for some more time.
9. Be very careful when adding salt to this recipe, because, we have added salt to the cooked pasta.
10. Now, the Macroni kuzhambu is ready, to eat with idli, dosa or rice.
