I thought, why not try this very popular sweet "Badhusha" for this year's Diwali .
If you follow the instructions step by step , the badhusha will come out really well.
The store bought badhushas are very flaky... soft and sweet. This is because they add baking soda
for preparing. But as we all know that baking soda is bad for our health, I did not use it in my recipe.
I made bite-size badushas , because, generally sweet lovers tend to eat more , so smaller the better !
You can make 50 bite-size badhushas from the ingredients I have given.
Maida ( All Purpose Flour )- 3 cups
Butter - 1/2 cup at room temperature
Curd (Yogurt) - 1 1/4 cup
for Sugar Syrup
Sugar - 2 cups ( this is enough if you are going to soak the badhusha pieces few at a time)
Water - until the sugar immerses
1. In a large bowl, put maida and butter and keep mixing well until, the flour is crumbly like sand.
2. Now, add the curd little by little and mix and make a soft dough, grease it with oil and leave
aside for 20 minutes.
3. While the dough is resting, prepare the sugar syrup to one string consistency.
4. Once you get the consistency , pour a little lemon juice so that it doesn't harden.
5. Heat oil in a deep pan, and start rolling the dough. Take a lime size ball from the dough ,
gently flatten it and press the middle with the thumb.
6. Now, the oil should be medium hot, and put around 10 of the balls in the oil .
7. Fry till they turn to golden colour, then immediately from the oil, put them into the syrup,
turn them well , so that they are coated well with the syrup.
Store in an air-tight container for 3 to 4 days.

8. Place them in a plate, once they cool down, you can see the white sugar coating on each of them.
