KAARA BOONDHI



I am going to share the recipe for making kaaraa boondhi for this diwali.
The recipe is quite a simple one with easily available ingredients.

Ingredients needed:

Kadalai maavu / Besan / Chickpea flour - 1 cup
Arisi Maavu / Rice Flour - 1 tsp
Salt - 1 tsp or as per taste
Chilli Powder - 1 pinch
Hot Oil - 2 tbsp
Water - 3/4th cup

Let's see how to make this boondhi
It is always better to sift the flours you are going to use in any recipe, so that it is free from any dust or lumps. So, sift the besan and rice flour.

Now add all the dry ingredients(i.e. rice flour, besan, salt and chilli powder) in a bowl and mix them well.

Then add the hot oil to this mixture and mix well with a whisk, so that the oil is well coated and mixed with the flour mixture.

Now add the water little by little to this and make a thick batter, without lumps. I would recommend using a whisk to do this, as it will be easier to make the batter without lumps. Once the batter is in a dosa batter consistency, it is ready.




There are gadgets available in various sizes and prices in the market to make this boondhi. But I use a normal stainless steel slotted laddle. If you don't have one, you can buy a stainless steel straining laddle or a slotted spoon available online.

Now, heat oil in a wide-mouthed pan for frying the boondhis. please make sure that the oil is hot. Only then, when you pour the boondhi batter, it will immediately rise into beautiful pearl-like balls.
Otherwise, it will form flattened balls or balls with tails.



Once the oil is hot, pour the batter through the strainer or laddle into the oil. Then turn them slightly and once the frying sound fades & when they turn crisp and golden color, take them out of the oil and strain them and transfer to a paper towel.



To make kaaraa boondhi mixture -----
After making all the boondhis, in the same oil, fry some washed and dried curry leaves, peanuts and cashewnuts and mix with the boondhi. While it is hot, add some more chilli powder if you want it to be spicy.




Some Variations:

You can add more chilli powder , if you like it spicy.

Alternatively, you can fry the peanuts, flattened rice(aval), Dalia(pottukkadalai), and curry leaves in the conventional oven. Place all these ingredients in a glass tray and pour a tbsp of oil and mix well.
Bake this at 325 degrees F for 7 to 10 minutes, turning them in the midway.

Pillayar Nombu ellai maavu

Pillayar Nombu is celebrated in honour of God Pillayar  (Ganesha) by the Chettiars  on the 21st day after the Thirukkaarthigai Deepam, when Sashti Thithi and Sadayam (also called Shatabhisha) Nakshathra come on the same day. Kambu Halwa {Pearl Millet Soft Candy}

Hi viewers I am very happy to post this blog after a very long time. I have chose my "ingredient" for this year's Diwali , to make sweet and snack. I am going to post atleast 2 sweet recipes made with Kambu Maavu / Pearl Millet Flour / Bajra Aatta. Gram flour Halwa (kadalai maavu alvaa)

I am going to give the recipe of Gram Flour Halwa Ingredients : Gram Flour (Besan) - 1 cup (sift before using) Sugar - 1 cup Ghee - 2 or 3 tbsp Crushed Almonds - 2 tbsp Water - 1/4 cup Kesar / orange colour- 2 drops 1. In a thick bottomed pan, heat the ghee and fry the gram flour well, till the raw smell goes. 2. After the raw smell of besan goes, add sugar to it and mix. 3. Immediately add the water and mix the besan well without lumps.  4. After it changes colour and is cooked, add the crushed almonds and kesar colour  and mix. 5.
