Today I am going to share my recipe of making simple wheat flour cookies. It is very simple and takes just 20 minutes to bake and enjoy with evening tea.
You will need
Wheat Flour -1 cup
Light brown sugar / naattu sarkarai - 1/2 cup
Oil (any cooking oil which you use) - 1/2 cup
Dash of salt
Baking Powder - 1/4 tsp
Cardamom powder / Vanilla extract- 1/4 tsp ( optional )
Pre-heat the oven to 310 ° F. Then, in a bowl, mix the sugar and oil for about 2 minutes continuously. If you are adding cardamom powder or vanilla extract, add it at this time.
Now, sift the flour, baking powder and salt into this oil sugar mixture and combine it well to form a dough. Do not over mix.
The correct consistency of the dough, you should be able to pull it apart, with your hands easily.
Now, place the dough sandwiched between parchment paper and roll it out evenly into 1/4 inch thickness.
You can use cookie cutters of any shapes of your choice or simply cut them into squares.

Lay out a sheet of parchment paper on to the baking tray. Then using a spatula , carefully take them one by one and place it onto the baking tray.
Now, bake them for 12-15 minutes, depending upon your oven.
Please note that the cookies are crunchy, but not hard to bite. Also, these cookies do not rise while baking. So, you need not lay them far apart on the baking tray.

Note :When you use wheat flour in a cookie dough, it will be dense when compared to All Purpose Flour and the cookies will be harder to bite. So, when you add baking powder, you will get a crunchier and easy to bite cookie.
