Whole Wheat Bread Without Yeast


My Recipe for today is Whole Wheat Bread without yeast / Pain sans levure  ! 

When I ordered my groceries this time, bread was not available at the store. 
So, I thought of baking bread with the ingredients I had at home. 

This is the first time ever I am trying baking a small loaf of bread and I did not have a loaf pan either. So, I have used a square container which measures 4 cups. If you have a loaf pan, please use that, but the measurements i have given below will not be enough to make the size of a store bought loaf and the baked loaf will be upto 3/4th of the loaf pan. 

You will need the following ingredients that will be easily available at home.
Wheat flour - 2 cups, leveled ( I used the normal wheat flour, that I use to make chapathi at home)
Baking Soda - 1/4 tsp
Baking Powder - 1/2 tsp
Whole Milk - 6 tbsp + 2 tbsp + a little for brushing at the end
Water - 6 tbsp
Sugar - 1 tbsp ( I did not use powdered sugar)
Yogurt - 1/4 cup, nicely beaten (I used homemade thick and creamy yogurt, made from whole milk)
Lemon juice - 2 tsp ( squeezed from a fresh lemon)
Oil - 2 tbsp ( any cooking oil, I used Canola Oil)
a pinch of Salt
Chia Seeds - 1 tsp (You can use any other topping as well like, Pumpkin Seeds, Flax Seeds, etc) 
Butter - to brush on top of the baked bread

We will start by making a mixture, which will be used as a substitute for yeast. In a bowl, add the 6 tbsp of milk, 6 tbsp of water, and 2 tsp of lemon juice. Please make sure all these are at room temperature. Stir well and keep aside for 5 minutes. It will look like curdled milk.

Now in a large bowl, sift the flour, baking soda and baking powder. Then add the salt and sugar and mix well. Then add the beaten yogurt  and 2 tbsp oil and mix well. 

Now start making the dough by adding the curdled milk mixture, little by little. if you feel that the dough is too hard, then add the the extra 2 tbsp of milk little by little as needed. This depends upon the consistency of the whole wheat flour, that you are using. I needed only one tbsp. There is no need to knead the dough for a long time, and also there is no need to rest the dough. 

Pre-heat the oven to 375° F for 10 minutes. Grease the pan you are using with cooking spray and line it with parchment paper. Transfer the dough to the pan and level it nicely using a spatula and sprinkle the chia seeds on top of it and gently press it and brush the top with little milk. This will give the top of the bread a good light brown color. 

Now, bake it for 35 to 40 minutes. The baking time differs from oven to oven and mine was ready in 35 minutes. If you insert a toothpick in the middle of the pan, it should come out clean. If the bread is not done yet, the toothpick will come out with with a little sticky dough. Then, bake for another 5 minutes or until the toothpick comes out clean.

When it is done, immediately brush the top with some melted butter, and cover the pan with a wet paper towel and leave it aside on a rack to cool. Once it is completely cool, cut thick slices. Please note that you cannot cut perfect thin slices like the store bought ones, as it will be a dense loaf of bread. 






Since I did not have a loaf pan, I used this square glass container to bake.

I have added a short video of how the bread slice looks like. It will not be soft as bread made with yeast or like white bread but it will be dense though.

Pillayar Nombu ellai maavu

Pillayar Nombu is celebrated in honour of God Pillayar  (Ganesha) by the Chettiars  on the 21st day after the Thirukkaarthigai Deepam, when Sashti Thithi and Sadayam (also called Shatabhisha) Nakshathra come on the same day. Kambu Halwa {Pearl Millet Soft Candy}

Hi viewers I am very happy to post this blog after a very long time. I have chose my "ingredient" for this year's Diwali , to make sweet and snack. I am going to post atleast 2 sweet recipes made with Kambu Maavu / Pearl Millet Flour / Bajra Aatta. Gram flour Halwa (kadalai maavu alvaa)

I am going to give the recipe of Gram Flour Halwa Ingredients : Gram Flour (Besan) - 1 cup (sift before using) Sugar - 1 cup Ghee - 2 or 3 tbsp Crushed Almonds - 2 tbsp Water - 1/4 cup Kesar / orange colour- 2 drops 1. In a thick bottomed pan, heat the ghee and fry the gram flour well, till the raw smell goes. 2. After the raw smell of besan goes, add sugar to it and mix. 3.
