Hello everyone!, As I had mentioned in my previous post, I am here today to share my recipe for one more new sweet dish " Kambu Pak / Burfi". Somehow, I have a liking towards the Kambu Flour / Pearl Millet flour / Bajri Flour. this may also be because I won the 4th place in a cooking competition for my entry 'Kambu Halwa"
You may wonder what is Kambu Pak. when they call the sweet made with Besan as Mysore Pak, then why not call the sweet made with Kambu Flour, as Kambu Pak" 😉
Lets see how to make this yummy Kambu Pak
Ingredients needed (makes about a dozen 1/2 inch thick squares)
Pearl millet / Kambu / Bajra Flour - 1/2 cup
Light Brown Sugar / Naattu Sarkarai - 1 cup
Whole Milk - 1/2 cup
Cardamom Powder - 1/4 tsp
Warm ghee - 1/4 cup
Any Cooking oil - 1/4 cup ( I used canola oil, but you can use any oil other oil except sesame oil, or peanut oil or olive oil. It will not be suitable for this kind of recipe, as it has its own flavor and aroma)
(We will use the ghee and oil as much as required. In the end, I had 1 tbsp each of ghee and oil left over.)
First, sift the flour and keep it aside. Now, without switching on the stove, in a thick bottomed pan, mix the Flour, Sugar, 1/2 the quantity of oil, 1/2 the quantity of ghee, and milk and mix everything into a smooth consistency paste.
Now switch on the stove and keep mixing continuously. At the beginning, the paste will not stick to the bottom. But as the sugar melts and starts becoming a syrup, the paste will stick to the bottom. So, you have to continuously keep stirring , to avoid any burns.
Add the left over ghee and oil little by at equal intervals. The past will absorb them quickly. Once the oil separates and the paste does not stick to the pan, it is ready.
In the above picture on the right, you can see the ghee around the mixture, as the oil has started to separate.
From the time we switch on the stove, till this consitency, it will approximately take 15 minutes. Immediately, switch off the stove and pour it into a greased tray.
After pouring into the tray, within 2 minutes, cut into desired shapes and pieces, otherwise, it will become hard. this is not a soft candy, but it is similar to the classic style of hard Mysore Pak.
