சூஸ் பெரி பிஸ்கட் is my all time favorite cookie ever!! My dad used to buy this from a nearby store in my childhood. Recently, I had a sudden craving for this biscuit and thought of sharing the recipe in my blog. I am sure anyone from Chennai, South India would have tasted this yummy cookie.
The store bought cookie would be in the shape of a cube, but I have chosen to make it in different shapes.
Let us see how to bake these simple and yummy cookies, which calls for only a few ingredients..
All Purpose Flour - 2 cups
Ghee + Oil - 1 cups
Sugar - 1 1/2 cups
Baking Soda - 1/2 tsp
Salt - 1 pinch
Now, in a bowl, sift the flour and mix all the dry ingredients. Now , add the oil + ghee mixture, little by little and make a dough.
Set this aside for 1/2 hour to 1 hour.
Now, preheat the oven to 310° F .
Flatten the dough on a greased plate and cut into desired shapes.
Line the baking tray with parchment paper / butter paper and lay the cut cookies and bake for 25 minutes.

TIPS : With the given measurement of the oil+ghee mixture, the top layer of the cookie will be soft and crumbly and the bottom will be crispy. If you want the cookie to be a little hard, you can reduce the oil+ghee mixture to 3/4th cup, instead of 1 cup.
Soon I will post some photos with this same recipe, but by substituting the All Purpose Flour with Wheat Flour, as we all know that Maida / All Purpose Flour is not good for health.
