KADALAI URUNDAI

Kadalai Urundai : Ingredients : Peanuts - 1 cup ,  Jaggery - 1 cup,  Water - 1 tsp Procedure:   1. Dry roast the peanuts in a skillet(frying pan). 2. Remove the skin and cut them into halves.   3. In a pan, put the jaggery and 1tsp water and heat a little , so that the jaggery will melt. Remember to strain the dirt from this syrup.   4. In a thick bottomed pan, pour the strained syrup and keep stirring (simmer). 5. when bubbles form and the syrup comes to one string consistency, off the stove.  You can also check this by putting a drop of syrup into a bowl of water. When the drop cools down, you should be able to roll it into a ball.   6. Put the processed peanuts into the jaggery syrup and mix well , so that all the peanuts are well coated. 7. Now, grease your hands with ghee or oil and roll into balls.   Variations: Most kids dont eat walnuts. You can add small pieces of walnuts along with peanuts, in this recipe....
