Mango Pachadi

Mango Pachadi Mango Pachadi This is a very simple and easy to make recipe. It is a Chettinaad Vegetarian Speciality. The type of Mango to be used in this recipe to get the best taste is mooku mangai. The indredients needed are Mango - cut with skin - 1 cup Onion - 1 small G. Chillies - 3 small Toor Dal - 3/4 th cooked - 1/2 cup Urad dal - 1 tsp Jeera - 1 tsp Curry leaves - few leaves Asafoetida - 1 pinch Method of Preparation 1. In a pan put the mango pieces and cook it gently.     It should not be mashed. 2. In a skillet, heat 1 tbsp oil and season with urad dal, jeera,asafoetida, curry leaves and green chillies. 3. Now, add the cooked mango, and the cooked toor dal . 4. Add salt as per taste and serve. This recipe can be modified into sweet pachadi, by substituting jaggery powder as per taste in place of cooked toor dal.

Sweet Poli

Sweet Poli Since i am updating my blog after a long time, i thought it would be good to start with a sweet dish "SWEET POLI". Though there are many ways for preparing this recipe, this  is my way of preparing Poli. The Ingredients required are : All Purpose Flour - 3 cups Warm Water - 2 1/4 cups Channa Dal - 1 cup Jaggery - 1 cup ( grated ) Cooking Oil - 4 tbsp Cardamom - 3 or 4 (crushed after removing the skin) Now, let's see how to prepare : 1. Put the all purpose flour, salt , warm water and 2 tbsp oil  and make into a dough. The dough      consisterncy is a little softer than chapathi dough. The proportion of water and flour which i have      given will be correct for the consistency. Sweet Potato and Potato Patty Delight (kids special)

Cutlets / Patties for kids This is an easy to make patties and healthy too for kids. The recipe does not include onions , green chillies , curry leaves or coriander leaves, which the kids don't like. Samagri list : Sweet Potato - 2 medium Potato - 2 medium Salt - as per taste Turmeric Powder - 1/2 tsp Chilli Powder - 1 tsp Garam Masala - 1/2 tsp  Rice Flour - 1/4 cup  Method of Preparation : 1. Peel off the skin of the potato and sweet potato and cut them into medium sized pieces. Steam them . 2. Now, mash these and add the salt, turmeric powder , chilli powder and garam masala and mix well. 3. Make round patties of this mixture and dust them with little rice flour. 4. VAZHAIKKAI & SAKKARAI VALLIKKIZHANGU KUZHAMBU This is an easy to make and delicious kuzhambu 's main ingredients are sweet potato and raw banana. It is a Chettinaad dish. COCONUT MILK PORRIDGE

COCONUT MILK PORRIDGE   Coconut Milk Porridge is a dish of Medicinal Value. There a very few ingredients for this dish. They contain medicinal qualities. The ingredients are:     Coconut - one 1/2 of a coconut   Raw rice/ Boiled Rice - 1/2 cup Fenugreek Seeds - 1tbsp     Garlic Cloves - 10 small (or) 6-7 large Procedure to prepare porridge 1. In a mixie, add the rice and the fenugreek seeds and grind for 1/2 a sec. the rice will broken , but not powdered. 2. In a pressure cooker or an electric rice cooker, add all other ingredients except coconut.   3. Add 3 cups of water and cook.   4. Take 1 cup of thick coconut milk from the coconut pieces. Red Capsicum Poriyal

RED CAPSICUM PORIYAL This is very easy to cook and there are a very few ingredients needed. Ingredients: Onion - 1 medium, chopped Tomato - 1 medium , chopped Red Capsicum - 2, diced Garlic - 5 pods , chopped Chilli powder - 1/2 tsp or as per taste Turmeric powder - 1/4 tsp Salt - as per taste Seasoning: Oil - 1 tbsp Mustard - 1/2 tsp Urad dal - 1/2 tsp Cumin seeds - 1/2 tsp Curry leaves - few How to make - 1. Heat oil and put all the ingredients required for seasoning . 2. Add the chopped onion, saute, then add garlic and saute well, till onion becomes golden colour. 3. Now, add the diced capsicum and saute. 4. Then add chopped tomatoes and saute. 5. Add salt, turmeric powder and chilli powder, and mix well. 6. Now, close with a lid and simmer, for a little while. PARUPPU PIRKANGAI (DAL WITH RIDGE GOURD)

PARUPPU PIRKANGAI This is a kind of Dal made with Ridge Gourd. You can also use chow chow(also called Alligator Pear) for this dish instead o f Ridge Gourd. This dish is easy to prepare for bachelors too.  You will need: Ridge gourd - 2 medium Split green gram - little more than 1/4 cup Tomato - 2 medium Garlic pods - 3 crushed Curry leaves - few Coriander leaves - 2 tbsp Chilli powder - 1tsp or as required Turmeric powder - 1/4 tsp Salt Cumin Seeds for seasoning   Now, 1. Peel the skin off the vegetable which you choose. 2. Heat 1tbsp oil in a pressure pan, put jeera and curry leaves. 3. Now, add the chopped vegetable and tomato together and saute for a minute. 4. Then add salt, chilli powder, turmeric powder, saute. 5. Add the washed dal now, along with 1 cup of water. 6. Now, pressure cook for 3 or 4 minutes. 7. When it is cooked, add the crushed garlic. Masala Panniyaaram- chettinaad special

Masala Panniyaram is a Chettinaad Special snack which can be prepared for any festivals like Diwali, or even as an evening snack. Ingredients needed: 1/2 cup - raw rice 1/4 cup - urad dal Onion - 1/4 cup chopped Curry leaves - few Green chillies - 5 to 7 as per taste Mustard seeds - 1 tsp Salt - to taste Oil - for deep frying Method of Preparation: 1. Soak rice and urad dal together in water for 2 hours.   2. Grind it in grinder or mixie into a vada batter's consistency.   3. In a pan , add 1 tbsp oil and add mustard seeds, chopped onion, green chillies, curry leaves and saute till the onion is transparent.   4. Now, add this and salt to the batter and mix.   5. This Sambhar Rice can be a very healthy meal for kids, who are picky. In this dish we can add any kind of vegetable except beetroot. If you can add green pepper or red pepper, it will definitely add a good taste to the dish. I have used carrot, peas, radish and potato. Let us see the method of preparation. Tomato Chutney    This chutney is an easy- to- make recipe, with very few ingredients.   Ingredients:   Onion - 1 large   Tomato - 1 large   Ginger - 1/4 inch piece Curry leaves - few   Mustard seeds - 1/2 tsp Urad Dal - 1 tbsp   Red chillies - 2 Asafoetida(hing)- a pinch     Method of Preparation :   1. Heat 1tsp oil in a skillet and add mustard seeds ,urad dal, red chillies and hing. Fry them nicely.   2. Now, add diced onion, curry leaves and saute till it looks transparent. 3. Now, add the chopped ginger and saute for a minute.   4. Now add the diced tomato and saute well, after adding required amount of salt.   5. Switch off the stove and allow it to cool.   6.
