Besan ki Burfi

Besan Ki Burfi Its Diwali and the season of Sweets . Lets learn how to prepare Besan Burfi. Ingredients : Gram flour - 1/2 cup Sugar- 1/2 cup Ghee / Oil  or Ghee + Oil = 1/2 cup or less  Water - 1/4 cup 1. In a thick bottommed pan, add the sugar and water and let it melt. 2. Now, when the bubbles form like a froth, add the sifted besan into it. 3. Keep mixing rapidly to avoid lumps. 4. Add hot oil / ghee little by little and keep mixing. 5. When bubbles form and mixture leaves the pan without sticking,  pour it onto a greased plate or plate wrapped with aluminium foil. 6. Cut into desired shaped pieces when it is still warm.

Gram flour Halwa (kadalai maavu alvaa)

Happy Diwali to all Readers !! I am going to give the recipe of Gram Flour Halwa Ingredients : Gram Flour (Besan) - 1 cup (sift before using) Sugar - 1 cup Ghee - 2 or 3 tbsp Crushed Almonds - 2 tbsp Water - 1/4 cup Kesar / orange colour- 2 drops 1. In a thick bottomed pan, heat the ghee and fry the gram flour well, till the raw smell goes. 2. After the raw smell of besan goes, add sugar to it and mix. 3. Immediately add the water and mix the besan well without lumps.  4. After it changes colour and is cooked, add the crushed almonds and kesar colour  and mix. 5. Now add 1 tbsp ghee to the mixture  and  keep mixing. 6. When the halwa does not stick to the pan, transfer it to a plate greased with oil or ghee. Instead of serving this halwa with spoon or trying to cut into pieces (which is difficult), you can make small balls out of it or wrap it in butter paper , like we do for badam halwa . Madras Rasam

We are going to learn how to make Madras Rasam. It goes well with Hot Idlis, Rice and you can also prepare Rasam Vada with this rasam. You will need,  Tomato - 1 medium, Garlic - 3 flakes Tamarind Paste - 3 tbsp Turmeric Powder - 1/2 tsp Rasam Powder - 1 tbsp (click this for rasam powder recipe) Water - 2 cups Salt as per taste Coriander leaves chopped - 2 tbsp For Seasoning : Mustard Seeds - 1 tsp Cumin Seeds - 1 tsp Dry Red chillies - 1 or 2 as per your taste Pepper corn (black)- 4 to 5 Asafoetida (hing) - 2 pinches Curry Leaves - few How to prepare: 1. In a pot, heat 1 tbsp oil , and put all the ingredients for seasoning. 2. Always, keep the flame in medium heat. 3. Add crushed garlic and saute. 4. Now add the chopped tomatoes and saute well.  5. Paruppu Payasam(பாசி பருப்பு பாயசம் )

This is a sweet dish called Paruppu Payasam, ie., Yellow Moong dal Kheer , it is easy to prepare . This recipe is very easy to prepare and even bachelors can prepare for their bachelor's party ! The ingredients are :  1 cup - Yellow Moong Dal ,  1 cup - Milk 2 cups- Powdered Jaggery Cardamom seeds  - 2 tsp powder Cashew ,Almond and Raisins - few, roasted in ghee 1. First, wash and pressure cook the dal in 1 cup of water for 3 minutes. 2. Boil the milk separately in a pan.  3. Then add the jaggery powder and the cardamom powder  in the dal until it dissolves completely. 4. Do not mash the dal, otherwise it will become sticky. 5. Now add the boiled milk and stir well.  6. Finally, garnish with the roasted nuts and raisins. Enjoy the Payasam and let your lives be sweet as this dish !!

Chettinaattu Secret Ingredient

This is a Chettinaad secret powder which can be used for all the gravies and dry curries. There are four ingredients used for this recipe. Peanuts - 1 cup Channa Dal  - 1/2 cup Urad Dal - 1/4 cup 1. Dry fry each ingredient separately , keep aside. 2. Grind all the fried ingredients with 2 green chillies. 3. Store in an air tight container in  fridge. You can sprinkle this powder for chicken gravy, dry vegetable curries , vegetable gravies, etc....

Wheat Bread Jamun

Are you feeling bored at home and are you a sweet lover??? Then here  comes a simple and easy to make sweet dish. You need not go to the store for the ingredients.... We are going to see how to make yummy and healthy wheat bread jamun at home. The reason why i chose wheat bread is that , now-a-days many people have switched to wheat bread from white maida bread so, we might have it at all times at home.  The ingredients we need are very commonly available at home. Wheat bread - 4 slices , cut off the crust and corners little water  Sugar - 1 cup  water - 1 cup for making sugar syrup food colour - orange (kesari colour) cardamom - 2 Method : 1. Cut the corners of the bread slices. 2. Dip the bread slices in a little water(use a shallow bowl) and take out immediately. 3. Squeeze out as much water as you can. 4. Simple and Quick Fish Gravy -

This is a simple and easy to make gravy. you can use any fish you like. Even bachelors can give this dish a try ! The ingredients you need are : Fish - Tilapia slices of 4 fish, cut into required size cubes Onion - 1 cup cubed Tomato - 1 cup cubed Garlic - 10 cloves Saunf (Fennel Seeds) - 1 tbsp Cooking oil - 1 tbsp Chilli Powder - 1 1/2 tsp Turmeric Powder- 1 tsp Salt - as per taste Preparation Method -  1. Wash the fish pieces well and marinate with salt and turmeric powder. 2. In a mixie / blender add onion, tomato, garlic, saunf and grind it into a paste. 3. In a thick bottomed pan, or non-stick pan heat 1 tbsp oil  and pour the ground paste. 4. Cover the pan to avoid splatterring, and allow the paste to boil till the smell goes. 5. Then, add the chilli powder, required salt and turmeric powder and saute. 6. Now, add the fish pieces and cover the pan. 7. After 10 minutes, the fish is done.  8. Finger Fish Fries

These finger fish fries will be yummy and kids' favourite. All you need is any boneless fish and a very few ingredients Tilapia - 10 pieces cut into finger size  (you can also use any fish which doesnt have a lot of bones) Salt, as per taste Chilli powder - 1 tsp Turmeric powder - 1/2 tsp Maize flour - 2 tbsp (you can also substitute with corn flour) Besan (Channa Dal Powder) - 3 tbsp lemon juice - squeezed out of half lemon little water - 2 to 3 tbsp oil to fry Now lets fry the fish fingers 1. Take a large plate and  put the salt, turmeric powder, chilli powder, maize flour and water and mix well. The consistency should be thick. 2. Put all the fish pieces on the mixed masala and mix the ingredients well with the fish. All the fish pieces should be evenly coated with the masala. 3. Now, pour the lemon juice and mix. Kollu Gravy (Horse gram Gravy)

Kollu Gravy Horse gram or kollu is a food given to horses, mainly because, it controls the weight and gives energy for the horses to win the race. That is why it is very good for reducing weight , especially for women. But it will make the body hot . So, you can use it once a week, it will make no harm. so, I thought to share this recipe with everybody. This gravy will be yummy and go well with parathas, chapathis, bread and also dosas.
