Jangri

Hi viewers,  In this post, we are going to learn how to make Jangri. Jangri and Jalebi are different. Jangri is made from Urad Dal and  Jalebi is made from Maida. Ingredients needed : Urad Dal - 1 cup Rice Flour - 1 to 2 tbsp Kesar Colour - few drops Sugar - 2 cups Water - 1 cup Oil - for frying Ziploc Bag for piping the batter - 1 Method of Preparation : First , soak the Urad Dal in water for 1 hour in water. Drain the water and grind it into a smooth paste by adding water little by little. I made this batter in a wet grinder . The consistency of the batter is , if you take a little batter in your hand and drop it , it should fall like a string . * If the batter is too thick, it will be like vada batter and won't fall from the bag. * If it is too thin, the shape won't stay. In this post, we can learn about preparing various types of chutneys. I have already posted them in my Vidhya's All in All  kitchen website.So , just follow the link by clicking on the name of the chutneys. The chutneys : 1. Onion Chutney  2. Tomato Chutney 3. Coconut Chutney 1 4. Coconut Chutney 2 5. Brinjal Chutney 6. Chow Chow Chutney 7. Paruppu Thuvayal The vegetable chutneys are very healthy for kids. They won't even know , if there is a vegetable in the chutney. It will be yummy with idlis, dosas, chapathis and also as bread spreads and chapathi rolls. Enjoy !

Easy Chicken Sukka

This is a very simple to make and yummy dish, which kids will love. You will need : Chicken - 1 cup (cut into small pieces) Ginger , crushed - 1 tbsp Garlic , crushed - 1 tbsp Salt- as per taste Dhania Powder - 1 tbsp Chilli Powder - 1 tsp Turmeric Powder - 1/4 tsp 1. In a pan, heat 1 tbsp oil, and put, ginger, garlic, chicken and saute together. 2. Add salt, turmeric powder, chilli powder and dhania powder and saute well. 3. Keep the flame in simmer and 1/2 cup of water. 4. Let the chicken get cooked well. 5. Now, add a little garam masala and keep sauting, till all the water is gone. Parangikkai Koottal Kuzhambu (Red Pumpkin Kuzhambu)

This is a very easy and and quick to cook dish. Ingredients : Red Pumpkin - 1 lb Onion - 1 large , chopped Garlic - 10 pieces Tomato - 1 medium chopped Tamarind - 1 lemon size, make a puree out of this Dhania Powder - 2 tbsp Chilli powder - 1 1/2 tsp Turmeric Powder - 1/2 tsp Water - 1 1/2 cups Salt - as per taste Cooking Oil for seasoning : Mustars seeds, Methi seeds, Fennel seeds, Channa dal - 1 tsp, Asafoetida, Curry leaves 1. Cut the red pumpkin into 1 inch cubes. 2. In a pressure pan, add the pumpkin, onion, garlic, tomato,dhania powder, chilli powder,salt,     turmeric powder , tamarind puree, water and 1 tbsp oil . 3. Now, switch on the stove and pressure cook this for 3 to 4 minutes . It has to only get cooked,      not mashed. So, be careful. 4. Macroni Kuzhambu(Elbow Pasta in a tamrind gravy)

This is a chettinaad special kuzhambu and also my maternal grandmother's recipe which is my favourite. This is an easy to make recipe and also very yummy. It is a good combination with idli, dosa and cooked plain white rice.        Ingredients needed : Macroni (elbow shaped pasta)  - 1 cup   Onion - 1 large chopped  Tomato - 1 large chopped Garlic - 10  pieces Tamarind - 1 lemon size Dhania Powder - 3 tbsp Chilli Powder - 1 tbsp Turmeric Powder - 1 tsp Salt - as per taste  For Seasoning : Mustard, Methi Seeds, Fennel Seeds, Asafoetida, Chana Dal - 1/2 tsp and  Curry leaves.    How to prepare : 1. In a pot , put the pasta , water, little salt and 1 tsp olive oil  and cook , then drain the excess water. 2. In a wok, heat 2 tbsp cooking oil, and add all the items for seasoning. 3. Egg Masala Dosai

This Egg Masala Dosa is a Kids Special Dish. It is very easy to make and also very yummy. Not only kids, even adults will love it. It is very healthy too. In the world of fast food  and junk food,  this will be a healthy and easy to cook breakfast or dinner for the moms. Ingredients needed : Dosai batter : 1 cup Eggs, beaten : 2  Jeera (Cumin)Powder : 1/2 tsp Pepper Powder : 1tbsp Salt : 1tsp Coriander leaves and curry leaves finely chopped : 1 tsp (optional) Grated ginger or Ginger Paste : 2 tsp(optional) How to Prepare : 1. In the beaten eggs, add the salt , cumin powder and pepper powder.  2. In the dosa batter , add chopped coriander leaves, and grated ginger, if your kids like.  3. Now add the beaten eggs mixture into the batter and mix well. 4. Now in a hot tawa (skillet) , pour a laddle full of batter into dosas . 5. Decorate  the dosas with ketchup in the shape of smiling face or any design your kids like. 

Beet Wheat Tortillas (Beetroot Tortillas)

This is a Kids Special dish. All parents especially mothers have a tough time feeding vegetables to their kids. So here is an easy way to give them beetroot , without the kids knowing what they are eating. Ingredients -  Beetroot - 1/4 of a medium beetroot chopped  Wheat Flour - 1/2 cup Salt to taste Jeera - 1/2 tsp chilli powder - 1 pinch Oil or ghee - 1 tsp 1. Pressure cook the chopped beetroot along with salt , turmeric and chilli powder and little water. 2.  Now, in  mixing bowl, take the wheat flour with little salt, mix well. 3. Make a puree of the cooked beetroot,or just mash it with a laddle nicely. 4. Add this to the flour and make a dough.  5. Finally coat the dough with ghee or oil and leave aside for 10 minutes. 6. Besan ki Burfi

Besan Ki Burfi Its Diwali and the season of Sweets . Lets learn how to prepare Besan Burfi. Ingredients : Gram flour - 1/2 cup Sugar- 1/2 cup Ghee / Oil  or Ghee + Oil = 1/2 cup or less  Water - 1/4 cup 1. In a thick bottommed pan, add the sugar and water and let it melt. 2. Now, when the bubbles form like a froth, add the sifted besan into it. 3. Keep mixing rapidly to avoid lumps. 4. Add hot oil / ghee little by little and keep mixing. 5. When bubbles form and mixture leaves the pan without sticking,  pour it onto a greased plate or plate wrapped with aluminium foil. 6. Cut into desired shaped pieces when it is still warm.

Gram flour Halwa (kadalai maavu alvaa)

Happy Diwali to all Readers !! I am going to give the recipe of Gram Flour Halwa Ingredients : Gram Flour (Besan) - 1 cup (sift before using) Sugar - 1 cup Ghee - 2 or 3 tbsp Crushed Almonds - 2 tbsp Water - 1/4 cup Kesar / orange colour- 2 drops 1. In a thick bottomed pan, heat the ghee and fry the gram flour well, till the raw smell goes. 2. After the raw smell of besan goes, add sugar to it and mix. 3. Immediately add the water and mix the besan well without lumps.  4. After it changes colour and is cooked, add the crushed almonds and kesar colour  and mix. 5. Now add 1 tbsp ghee to the mixture  and  keep mixing. 6. When the halwa does not stick to the pan, transfer it to a plate greased with oil or ghee. Instead of serving this halwa with spoon or trying to cut into pieces (which is difficult), you can make small balls out of it or wrap it in butter paper , like we do for badam halwa .
