Oats Laddoo / Oatmeal Candy Balls

On a relaxed Saturday morning, I was thinking about what to make for breakfast. Hmm... why not make Oats Dosai and Tomato Chutney for breakfast. I roasted some old fashioned oats and powdered it. Just then, a spark came to my mind, to do something new with this powder.  AND..... here comes the new healthy recipe...... Oats Maavurundai  You will need :(makes 4 medium sized balls) Dry Roasted and Powdered Oats  - 1/2 cup Light Brown Sugar (naattu sarkarai)- 1/4 cup firmly packed Cardamom Powder - crush the seeds of 2 cardamoms Ghee / clarified butter - 1 tsp   1. In a mixing bowl, add the dry ingredients and mix well.  The brown sugar will not easily        mix  without lumps. Murukku / Chakkli

எல்லோருக்கும் எனது இனிய தீபாவளி நல்வாழ்த்துக்கள் ! This is a very easy to make snack for diwali, nothing to go wrong in it. Just follow the instructions for a crispy melt in the mouth murukkus. I used freshly bought rice flour and urad dal flour from the store.   முறுக்கு செய்முறை : (makes 30 murukkus) Rice Flour - 1 cup Urad Dal Flour - 1/4 cup Butter - 2 tbsp at room temperature Salt- 1/2 tsp or as per your taste Carom Seeds ( also called Ajwain or Omam ) - 1/2 tsp Water - 1 cup In a large bowl, add the rice flour, urad dal flour salt and omam, and mix nicely. Now add the butter and mix well.  Now start adding the water little by little and make a soft dough.  Take a star shape disc in the presser and make murukku shapes on a butter paper or any plastic sheet. Hello viewers, Advance Diwali wishes to all of you ! I thought, why not try this very popular sweet "Badhusha" for this year's Diwali . If you follow the instructions step by step , the badhusha will come out really well. The store bought badhushas are very flaky... soft and sweet. This is because they add baking soda for preparing. But as we all know that baking soda is bad for our health, I did not use it in my recipe. I made bite-size badushas , because, generally sweet lovers tend to eat more , so smaller the better ! You can make 50 bite-size badhushas from the ingredients I have given. Poorana Kozhukkattai for Vinayaka Chathurthi

Happy Vinayaka Chathurthi to all readers. I am going to give the recipe of Paasiparuppu Poorana Kozhukkattai. Many people make kadalai paruppu poorana kozhukkattai. But, I tried with Pasipparuppu (Yellow Moong Dal). I have also heard that kadalai paruppu gives us gastric troubles. Ingredients needed : For the filling (pooranam) Yellow Moong Dal - 1 cup Jaggery - 1 1/2 cup Cardamom Seeds - take out seeds from 4 elaichis Water  - 1 to 2 tbsp For the Outer Cover : Rice Flour -2 cups Water - 4 cups Method : 1. Dry roast the dal in medium heat until it changes colour . Allow it to cool down . 2.  Once the dal is cool, powder it in the mixie . 3. Add the powdered jaggery  and powdered cardamom seeds to the dal powder and  turn on the mixie again. Everything will become a powder . 4. Everybody loves Kothu Parota and that too if it is Chicken Kothu Parota, then that's it. So, join me friends, in the preparation of Chicken Kothu Parota. You will need : Malabar Parota -4 (homemade or store bought) Chicken - finely chopped 1 cup Eggs - 2  Onion - 2 finely chopped  Tomato - 1 finely chopped Green Chillies - 4 medium Ginger - 2 tsp crushed Turmeric Powder - 1/2 tsp Chilli powder - 1/2 tsp (you can add more if you wish) Garam Masala Powder - 1/2 tsp Salt - as needed Curry leaves - a few Corinader leaves  - finely chopped  How to prepare : 1. Happy Krishna Jayanthi to all readers ! I made seedai for Krishna Jayanthi . I used store bought Rice Flour and Urad Flour for this recipe. Rice Flour : You can make the rice flour from the scratch, by soaking the raw rice in water for sometime, then  spread it on a paper tissue or a newspaper until the wetness is gone. Then make a powder of it in a mixie  and then sieve it . Now, dry fry it until it is  hot to touch . Keep it aside.  Urad Flour : Take some 3 tbsp of urad dal, dry fry it and let it cool. Kesari (கேசரி)

This sweet dish is simple and easy to make with ingredients which are all time available. I had very less time early this morning to make some sweet on my wedding anniversary. So, I chose kesari , which took only 10 minutes to prepare. Let's see how to prepare kesari. Ingredients needed : Sooji (Rava)- 1 cup Sugar - 3/4 cup or 1 cup Water - 2 1/2 cups Ghee  - 2 tbsp Cashew nuts and raisins - 2 tbsp Cardamom Powder - 1/2 tsp Yellow food colour - 3 drops (you can also choose orange colour) In a thick bottomed pan , heat 1 tbsp ghee and first roast the nuts and raisins and  keep it separately. Simultaneoulsy ,boil the water in a pan . Now add the rava in the same kadai and keep roasting it in low flame, until you get a good smell . Then pour the boiling water into the roasted rava and keep stirring continuously so that lumps do not form. Once the rava is cooked, and becomes thick, add the sugar and keep stirring. Simple Shortbread Cookies

These yummy shortbread cookies are kids favourite. Let us see how to bake them. You will need : Makes approx. 50 1 1/2 inch cookies 2 cups - All Purpose Flour 1 cup -  Sugar 1 cup - Unsalted butter (2 sticks) at room temperature 1 tsp  - Vanilla extract 1 pinch - salt How to bake : (Pre-heat the oven to 295 degrees F) 1. In a large bowl, add butter, sugar and vanilla extract and mix and     cream them well on low speed .     If you are using a laddle or a fork, keep mixing continuously until     the mixture becomes creamy. 2. Rava Panniyaaram (Semolina Fritters)

Rava Panniyaram (Semolina Fritters) This is an authentic dish from Chettinaad Cuisine. It is a sweet dish and can be prepared very easily. Everybody will have Semolina and Sugar at home all the time. So, we need not worry if we have a sudden guest and you want to offer them something sweet. Ingredients needed : Semolina (rava) - 1cup Sugar - 3/4 cup Method of Preparation : 1. Soak the rava in little waterjust enough to wet the rava for 10 minutes. 2. Now transfer this into the blender and add the sugar. 3. Nicely blend it until it forms a batter. It will take just 2 minutes. 4. Do not add water to grind. Since you add sugar, it will blend with the rava     well and form a batter. 5. Now, heat oil in a pan for deep frying. 6.
